Pumpkins are not the only goodies coming from the pumpkin patch – pumpkin shoots are delicious tender greens that can be enjoyed throughout the growing season!
They do require a little bit of preparation before they can be cooked and eaten, namely, their outer fibres must be stripped away from both stems and leaves. It is a technique that is easily mastered after a few hours of processing pounds of shoots!

Ingredients
- 125 g pumpkin shoots, pre-prepared
- 3 tbs olive oil or cooking oil
- 75 g tomatoes, sliced
- 1 tsp mushroom seasoning (or to taste)
- 2 tbs soya sauce
- 1/4 cup water
Procedure
- Wash pumpkin leaves, rubbing gently to break the ribs.
- Add everything into a pot and cook on medium heat. Stir until liquid is boiling. Lower heat to a simmer and cover for 10-15 minutes.
- Dish is done when pumpkin shoots are tender to taste.
